Emulsifying Agent

In the process of creating an emulsion, a surface-active substance known as an emulsifying agent (emulsifier) adsorbs at the freshly created oil-water interface, shielding the newly formed droplets from quick recoalescence. A chemical substance known as an emulsifying agent enables the blending of two or more immiscible liquids.
